Chocolate cake made on yellow peas (80% protein, 3,2% carbohydrates)
Can chocolate cake be a super food? It depends on how you make it. This recipe started back in the summer of 2011 with a baking day in Handsjöbyn in southern Jämtland, when I also gave a lecture at the village hall about health and alternative medicine.
The original recipe was with chick pea flour. But this recipe is with a protein flour made on yellow peas. It has 80 % protein and only 3,2 % carbohydrates! It's absolutely perfect. As a sweetener I use Erythritol which has 100% carbohydrates but these carbohydrates does not affect blood sugar or cause an increase in blood insulin levels.
I guess you could call this keto or lchf if you don't count the carbohydrates in the Erythritol.

Recipe
You will need a hand held mixer, an immersion blender preferably with a metallic blade.
Bring 4 dl (400 ml) of water to a boil in a saucepan. Pour in 2 dl (200 ml) protein flour made on yellow peas, 1 tsp vanilla extract, stirring immediately with the immersion blender, and lower the heat slightly to medium high. Pour in 300 g real butter, melted or whole stirring immediately with the immersion blender. Add 2 dl (200 ml) of Erythritol and blend, keep blending until the mixture becomes smooth. Finally, add 2 dl (200 kl) of cocoa powder and 20 drops of Japanese mint oil, stir, and blend. It's important to let the batter simmer for about 7 minutes; otherwise, it may have a harsh, raw taste. Pour the chocolate IMMEDIATELY into the pie pan with a removable rim, otherwise it will start to set in the saucepan. Smooth out the chocolate in the pie pan, place the pie on a desk for 30 minutes and the in the refrigerator to cool and set for about 2 hours. Remove the sides of the pan and slice into wedges. Serve with whipped cream.
About Erythritol and Stevia
Erythritol is sold under different names: Sukrin, nicks use like sugar and more. It contains no calories. Some newspapers and websites issue warnings, claiming it is dangerous, but there are major financial interests corrupting the media to scare us. Who wants to scare us? Sugar companies, aspartame companies, and pharmaceutical companies. They want us to have diabetes, be overweight, and be dependent on the healthcare system. I have used erythritol for quite some time without getting sick.

If you don't want Erythritol you can use honey and Stevia, then take 6 tsp honey and 1,5 teaspoons liquid Stevia. Or use Xylitol (birch sugar)

Flavoring - it's up to you
This cake had flavoring with Japanese mint oil. I had 20 drops in the cake. Perhaps that is to much? You can try with 15 drops, Japanese mint oil is very strong.
Buy Japanese mint oil
If you want to you can of course skip the Japanese mint oil and just settle for the chocolate flavor. But you can also add some orange flavor to the cake. Then instead of 4 dl (400 ml) of water you take 4 dl (400 ml) of orange juice. You can also peel an orange and add the zest to the batter. But you have to use organic oranges, because commercial oranges are heavily sprayed, and the peel tastes toxic.
Don't want orange? Go for hazelnuts!
hazelnut butter natural buy
Put in, perhaps 200 ml of hazelnut butter or mixed hazelnuts.

Thank God - the Almighty Creator
Remember to thank the God of Israel that He has created yellow peas. They are perfect for building muscles. Green peas and yellow peas are sort of the same, it’s just that yellow peas are ripe. Thank Him also that He created cocoa beans.
